Turkey Tortilla Soup
This recipe comes in handy around the turkey holidays (Easter, Thanksgiving, Christmas...) I'm personally not a huge fan of leftover turkey, it just gets a little dry for me. BUT this recipe (which I grew up with thanks to my mama) changes my perspective. You can easily substitute chicken, tofu or make it completely veg! Havana is currently very into soups so this has been a popular one in our household! Plus the cold weather + a hot, tasty bowl of soup is the perfect combo these days. What you'll need is...
1 chopped onion
1 pack of taco seasoning
1 can of diced or crushed tomatoes
6 cups of chicken broth
1 can of corn
1 can of black beans
2 cups of shredded turkey or chicken
cilantro (to garnish)
cheddar cheese (to garnish)
sour cream (to garnish)
tortilla chips (to garnish)
I love cooking soups because they're a 1 pot stop, meaning, you pretty much just throw everything in a pot & simmer away! To start sauté an onion in butter or oil until golden, add in the taco seasoning and simmer another minute. Then add in the tomatoes, broth, corn, beans and turkey and bring to a boil. Simmer on medium heat for around 20 minutes and add a handful of chopped cilantro.
Serve in a bowl with sour cream, cheddar cheese, tortilla chips and more cilantro (a personal preference).
