Strawberry & Lemon Ice Pops
Havana loves strawberries and ice pops, she also enjoys a good sour lemon. So combining them to make a nice summer treat was an obvious idea. It also works great to stir a glass of rosé with (just saying). With chunks of strawberries and bites of lemon throughout, you'll be happy you made these :)
6 large strawberries (roughly)
1 cup of cold water
1 tsp of honey (optional)
*makes 4 ice pops
I steam and puree my strawberries because I like to make my puree smooth and icy, but you can also use a food processor or just mash them by hand (however you want to do it!). I find the puree way makes them icy (which my little one loves). Squeeze 1/2 the lemon into the water and then mix with the strawberry puree & honey (optional). Mix and pour into your popsicle mould, then add in a couple slices of strawberries & lemon pieces (from the other 1/2 of the lemon) into each mould. Freeze & enjoy!
Aunty Angie's got the breakdown of all the nutritious deliciousness these ice pops carry. Lemons are an excellent source of vitamin c and are also a good source of potassium and vitamin b6 (which is good for morning sickness and nausea for my first trimester mamas!). Strawberries are also an excellent source of vitamin c (& fiber!) Like most berries, strawberries are rich in flavonoids, which have been proven to fight inflammation. So with hot days quickly approaching, you can feel good about handing your little one (& yourself) these ice pops!
