Spinach & Ricotta Stuffed Cannelloni
My mom discovered this recipe when I was in my early 20's and it's easily one of my favourite dishes (& now Havana's) and even better, super easy to put together. I make a big batch (leftover pasta is always a good thing) You simply need...
1 box of oven ready Cannelloni
Tomato Sauce (enough to cover the bottom of your dish and cover the pasta)
1 container of ricotta cheese
4-5 large handfuls of spinach
Olive oil to cook in
4 cloves of garlic
Salt & pepper
Roughly 3 cups of grated cheddar cheese (go more or less depending on what you'd like)
For the tomato sauce you can go homemade or store-bought whatever you prefer or have time for! If you wanna go homemade, here's a link to my recipe! Spread a layer of sauce on the bottom of your dish to prevent sticking. Sautée the spinach and garlic in a pan with olive oil until lightly wilted. Combine that to a bowl with the ricotta, egg and salt & pepper and mix together.
I use a small spoon to fill the cannelloni (you're gonna get a little messy, it's inevitable) or you can use your hands, I won't judge you. Scoop in the mixture to each cannelloni until filled (I use the back of the spoon to push it all the way through) then place in the baking dish side by side. Do this until the mixture is gone. Cover fully in tomato sauce (this is what cooks the cannelloni), cover and bake for about 25 minutes - this will vary depending on how your oven cooks, mine's quite quick! Remove the cover, add grated cheese then bake until golden brown and melted (roughly another 15 minutes). Let it cool for 5 minutes then enjoy!
