Nani's Butter Chicken

Butter Chicken is my go-to indian comfort meal, and my mama's recipe is easy & unbelievably delicious. Havana goes crazy for this recipe, babies need a little spice in their life too! Easy to make and even better leftover (day old curry is where it's at). The below spices are easy to find in any grocery store, all you'll need is...

3 chicken breasts diced

3/4 of a white onion

handful of fresh cilantro

1 lime

2-3 tbsp of minced garlic

1 tbsp of grated ginger

1 can of tomato paste

1/2 tsp salt

1 tsp masala

1 tsp ground cumin

1 tsp turmeric

2-3 cups of creamo (can also sub half & half or coconut milk)

Butter or Ghee (to cook in)


In a pot fry the onion in butter or ghee until golden, add in the ginger & garlic and cook for about 2 more minutes. Add in the spices (salt, masala, ground cumin, turmeric) mix and then add in the chicken. Cook covered on med/low for about 25 min (until the chicken is cooked through) stirring occasionally.

When the chicken is done mix together the tomato paste and creamo (or whatever you choose to use) in a separate bowl. You can add more or less depending on how thick or thin you'd like the sauce to be. Add it to the chicken and cook for another 5 minutes.

Turn off the stove and squeeze in the lime, stir and garnish with cilantro (I like to mix a little cilantro in as well). Serve with Naan, over rice, quinoa...whatever you'd like!

So basically it's a meal you can feel good about serving your loved ones :)
