Green Eggs (yeah, it's a real thing)

This is one of the easiest ways to incorporate a bunch of veggies into your baby's scrambled eggs & it's super tasty. I make a big batch for the whole family for breakfast! You can add whatever veggies you like but I use...
-1 egg
-a large handful of spinach
-2 small mini red/yellow peppers
-a small handful of chopped onion
-1-2 cloves of garlic
-splash of oat mylk
-1 tsp of butter, ghee or olive oil
PREPARATION: Steam all the veggies together then blend until it creates a chunky puree. In a separate bowl scramble your egg with a splash of oat mylk (to soften) then mix in the veggie puree. Melt a little butter, ghee or olive oil in a pan and scramble like usual! I serve with a side of avocado, a little shredded cheese & whatever she feels like stealing off my plate, usually my bagel.
Aunty Angie (my sister, a holistic nutritionist) loves this recipe because spinach is a good source of magnesium, iron (twice as much iron as most other greens) & vitamins A,C & K - which is important for maintaining bone health. There is actually no vegetable richer in Vitamin K than spinach so you can feel extra good about serving this to your little one(s)!
