Broccoli Cheddar Bites
Broccoli and cheddar is one of those classic combos (in my opinion) that's hard not to love. These bites are one of the easiest snacks to whip together, they're perfect for a snack or a side addition to any meal. They only require a handful of ingredients!...
1 head of broccoli
1 cup of grated cheddar cheese
1 handful of crushed ritz crackers
1/2 tsp of garlic powder
1 handful of chopped spinach
butter to grease the muffin tin
Steam the broccoli then mix all the ingredients together (that's it, see how easy that is!) I use a mini muffin tin because I like little bite size snacks for Havana but a regular muffin tin would work as well! Apply an even mixture to each greased muffin tin, you can fill them to the top as these don't rise - make sure not to press down the mixture into the tin otherwise they'll become dense during the cooking process. Bake on med heat for about 10-15 min (until golden brown) & you're done!
My husband eats these like popcorn & Havana likes to walk around with one in each hand taking bites as she does laps around the kitchen. You can easily add to these... chicken, ham, peppers, kale... the possibilities are endless. However you and your family eat them, they'll be a hit!
